we're making passion fruit flakies, with homemade puff pastry and a yummy real fruit filling! They're kind of like the ones you might have had as a kid but definitely more refined!
** makes 6 passion fruit flakies **
PUFF PASTRY INGREDIENTS:
1 1/2 C all-purpose flour or pastry flour
1/2 tsp sea salt
6 tbsp cold vegan butter
1/2 C cold water
1. Pre-heat oven to 350F
2. In a food processor combine flour, sea salt, and cold butter until a crumb like texture is achieved with chunks of butter still visible. Then slowly start adding the cold water to the mixture while the food processor is running. Very quickly the dough should come together as a ball. Stop the machine and empty out the dough ball onto a floured surface.
3. Roll out the dough to a large rectangle, then fold it in half lengthwise, fold that in half, and then in half again (3 times). Then roll it out flat again and repeat this whole process 6 times. Lastly, roll it out flat again.
4. From the large rectangle cut 4 rows across and 3 rows down so you have 12 rectangles or squares. Place these squares on parchment lined baking sheets.
5. Melt 1 tbsp of vegan butter and brush 6 of the squares with a coating of butter, then sprinkle granulated raw sugar (demerara sugar works too) on top of the melted butter.
6. Bake for 12 minutes at 350F or until they are puffed and lightly golden brown on top.
** while the pastry is baking you can prepare the passion fruit jam and cream **
PASSION FRUIT JAM INGREDIENTS:
5 passion fruits
3/4 C frozen strawberries
1/4 C sugar
1/4 C water
1. Cut the passion fruits in half and scoop out the inside fruit and seeds into a blender. Add in the remaining ingredients and blend until smooth.
2. Transfer to a small sauce pan and heat over medium for 10 minutes, whisking occasionally until thickened and reduced by half.
3. Remove this from the heat and allow to cool completely before assembling the passion fruit flakies.
coconut whipped cream:
1 can full fat coconut milk
1/2 tsp sugar
1. Make sure to refrigerate your can of coconut milk overnight. Open the can and scoop the more solid coconut cream off the top, being sure not to use any of the water that has settled to the bottom. This is about 1 cup of coconut cream.
2. Place it in a mixing bowl with the sugar. You could also keep your mixing bowl in the freezer before doing this so it's cold as well. Using a hand mixer beat the cream and sugar together until whipped.
3. To assemble the passion fruit flakies, just place as much coconut cream as you like on the bottom of one piece of pastry, top with passion fruit jam, and place a piece of the sugar coated pastry on top!
